  • 1 ¾ cup all-purpose flour 

  • 1 tsp. baking soda 

  • ½ tsp baking powder

  • ½ tsp. salt 

  • 2 ½ tsp cinnamon 

  • ½ tsp allspice

  • ¼ teaspoon nutmeg 

  • 1/2 tsp ginger

  • 1 cup sugar 

  • â…“  cup dark brown sugar 

  • ½ cup vegetable oil 

  • 1 tbsp vanilla extract

  • ¼ c milk 

  • 2 eggs 

  • 1 can pumpkin  

  1. Preheat oven to 375 degrees Fahrenheit & place  paper liners in muffin baking pan

  2. Sift together flour, baking powder, baking soda, salt, cinnamon, allspice, nutmeg, & ginger in a bowl. Set aside

  3. In another medium bowl, whisk white sugar, brown sugar, milk, vanilla, vegetable oil, eggs & pumpkin

  4. Pour wet ingredients into dry ingredients & stir until just combined. Overmixing makes a tough muffin!

  5. Using an ice cream scoop, fill muffin liners ¾ full. 

  6. Bake for 18-20 minutes
