(Bahamian-inspired dish)
I would prefer a grilled conch! But I have to work with what I have and use a seafood trio
  • 2 pounds of snapper filet

- fresh Lime juice (2 juicy limes), 1 ½ tsp salt, 1 tsp habanero Peppers, 1 tsp lemon pepper

  • Two lobster tails

- 1 large lemon 1 tsp garlic powder, ½ tsp salt

  • One pound of shrimp

  • ¾ tsp salt, 1 tsp old Bay, 1 tsp garlic powder 1 lemon,

  • 1 medium onion
  • 1 bell pepper

  • 1 Plantain

  • 1 lime

  • 1 tbsp. Mrs. Dash garlic blend

  • 4 tbsp. butter

  1. Season fish with lime, salt, habanero peppers, & lemon pepper

  2. Season Lobster tails with lemon juice salt & garlic

  3. Season shrimp with Salt old bay seasoning, garlic powder, & lemon juice

  4. Allow marinating in the refrigerator for at least 1 hour or overnight

  5. Slice onions, bell peppers, & plantain.

  6. Lay out 2 sheets of heavy-duty foil. Divide onions, bell peppers, & plantain & add to them. Divide seafood & set fish lobster & shrimp on top of vegetables then cover with more onions, bell peppers, & plantain. Use juices from the marinade to pour on top. Squeeze ½ a lime over each portion. Sprinkle with garlic blend from Mrs. Dash & add butter to both. Seal both foil sheets tightly & place in a preheated oven on roast at 425 degrees F x 15 minutes.

  7.  Remove from the oven & eat from foil. Squeeze a lime over the top & add goat (habanero) pepper to your liking.
