Chicken Feta Spinach Patties

The Filling
  • ½ tsp oil

  • ½ medium onion

  • ½ medium bell pepper 

  • ½ stick butter

  • 4 cloves Garlic, chopped

  • 4 green onions

  • 2 bunches of fresh spinach

  • 3 tbsp fresh chopped parsley

  • ½ tsp dill

  • 1/4 tsp salt

  • ¼ tsp black pepper

  • 1 cup Shredded chicken breast 

  • 1/3 c ricotta cheese

  • 8 oz. feta cheese

  • 1/2 c parmesan

  • 1 egg

The Pastry
  • 4 c flour

  • 2 tsp salt

  • 1 tbsp. curry powder

  • 2 tsp turmeric

  • 1 1/4c butter (cold)

  • 1 1/4 c cold water

The Egg wash
  • 1 egg

  • 1 tbsp. water

  1. To a large bowl, add flour along with salt, turmeric, & curry powder, & whisk until thoroughly combined. Add butter, using a pastry blender, (a fork or your fingers would do too). mix until the crumbs are pea-sized.

  2. Add cold water & mix. Put onto a lightly floured surface & mix just until the dough comes together. Add more water if needed. Do not overwork the dough.

  3. Shape into a ball, cover in plastic wrap, & allow to rest in the refrigerator for approximately 30 minutes.

  4. Remove from the refrigerator, roll out the dough thinly & fold one-third over, then another third to make three layers. Then fold into three, until square shaped & return to the refrigerator to rest for 45 minutes.

  5. While the dough is resting, prepare the filling.

  6. Shred the chicken breasts.

  7. add chopped onions & bell Peppers to a frying pan with oil. Cook until soft, then add butter & garlic & cook till fragrant.

  8. Add green onions. Sauté then add spinach, parsley, & dill. Cook until wilted.  

  9. To a bowl, add the sautéed spinach & season with salt & black pepper. Add the shredded chicken, ricotta cheese, feta cheese, parmesan cheese, & one egg & mix until combined.

  10. Remove the dough from the refrigerator. Repeat folds as done before & the dough is ready to be rolled out & prepared for filling.

  11.  Roll out dough & cut out circles using a small bowl. Roll out each circle & place filling on one side of the circle with a ½ inch border all around. Fold the dough over & seal the edges closed using a fork. Repeat until the filling & pastry are done. 

  12. Place patties on a parchment-lined baking sheet. Brush tops of patties with egg wash & place in oven on 375 for 25 minutes 

  13. Remove from the oven & enjoy!

I used chicken breasts that were seasoned already with salt. Hence, only ¼ tsp salt was used for the filling. Adjust salt to taste.
